weekend

Had a good weekend, went for a walk Saturday morning which was nice.
It is so great to see the area especially since we are so new to it, its great finding places. We found a tennis court which was great,
Every time we go down south we always go to play tennis so I said to Joel now we have found one so close we will have to get ourselves some cheap 2nd hand tennis rackets. So now I’m on the hunt for tennis rackets ha ha.

We then headed to this engagement party, it was so far away. But it was good catching up with people we haven’t seem since the wedding. It was so cold though.

Yesterday we just chilled out. Put my roast chicken in the slow cooker and watched DVD’s all day which was nice to do, haven’t done that in so long. The chicken turned out amazing, and Joel was very appreciative he loved it. I found the recipe from a forum I use, and I will defintley be using again. Here it is if anyone else would like to give it a try so easy and so yum.

- 1 medium sized free range corn fed chicken
- 1 Lemon
- Rosemary
- 6 cloves garlic
- Butter
- Salt & Pepper

Wash and dry chicken inside and out. Pat dry with paper towel. Season the whole chicken with salt & pepper and rub in a bit. Cut small cubes of butter and push about 4 cubes underneath the breast skin on each side. Inside the chicken put more cubes of butter, 4 smashed cloves of garlic, 2 sprigs rosemary & half the lemon (cut in half again). (I did this the night before and covered in foil).
In the bottom of the slow cooker put 2 cloves garlic and a few small cubes butter. Put the chicken on top in the slow cooker. Break up 1 sprig rosemary over top top of the chicken and push into skin a bit. Squeeze the other half lemon over the top.
Cook on high for 4 hours, basting the chicken twice towards the end. Take out and cover with foil for 10 mins before carving!

I put carrots behind the legs and wings. Also I put it on low for 8 hours.

Here is a pic of Joel and I from the engagement party:

Realising the obvious

This week has been a horror of a week and I am glad it is finally Friday. A lot of thing happened this week out of my control but I felt myself spiralling out of control
in every shape and form. After a relaxing and calming night I have decide to take a new direction in life.
I realise I can’t control everything even though I would love too cos I am a control freak. But from now just
To sit back and relax and just take what comes, and try to sort it out if it’s out of my control there’s no point
Using all my energy trying to change it when I can’t. I know this is pretty obvious for most, but I have only just come to the realisation I can’t control everything, much to Joel’s delight lol. So this is a more positive me I guess, hence the change of title for my blog.

Next Wednesday I am starting a 10 week course in MYOB and Payroll and at the end of it I will receive a Certificate 3, so I’m pretty stoked about that. It just makes me look more hireable when I’m looking for a new job.

This weekend is pretty jammed packed, tonight dinner and cocktails with my bestie and her sister. Tomorrow we have an engagement party, it’s so far away though and I’m not really that excited about it and plus I have to drive, boo no drinking and Sunday will be cleaning the house and I am making a yummy roast chicken for dinner.

So after realising the obvious, here’s to better times.
